Zucchini and New Onions with Pesto

Ingredients:
2 cups packed basil leaves
¼ cup olive oil
2 garlic cloves
¼ cup pine nuts or walnuts
¼ grated parmesan
Pinch black pepper
4 cups zucchini or summer squash sliced ¼ inch thick
1 or 2 onions (julienne cut)
2 T olive oil
Salt and Pepper to taste
Pesto
1.Pulse everything but oil in food processor to chop it up, add olive oil and process until blended but not too smooth.

Sauce
1. Heat saute pan to very hot, add ½ the oil then ½ the squash and onions. The idea is to quickly sear the veggies to golden brown without them getting soft.

2. Transfer to a bowl and repeat process.

3. Toss with pesto.
