2 c. fresh shelled peas
¼ c. chopped garlic scapes
¼ c. pine nuts or walnuts
½ cup chopped basil
2 T. chopped mint
½ c. parmesan cheese
¼ c. to ½ c. olive oil
Pepper to taste
1. Heat sauté pan and add ¼ c. olive oil, peas and garlic scapes. 2. Saute over high heat for about 2 minutes and toss in nuts for 2 more minutes. 3. Off heat add herbs and toss. You could puree this for a smooth consistency or use the back of a fork to have a lumpier consistency, add more olive oil if you wish and the cheese. 4. I made a potato salad with this as the dressing, or serve it with pasta or as a dip for bread.
