Honey Lavender Vinaigrette

6 T. olive oil
2 T. cider vinegar
2 T. fresh lavender blossoms
1T. honey
1T chopped chives
1/2 t. each salt and pepper
1 bunch each of radishes and beets
1. Whisk all ingredients together or pulse in food processor. 2. Slice radishes and beets as this as possible with a mandoline or ceramic bladed veggie shaver.(The thinness of the beets is especially key here because they are raw) 3. Pour vinaigrette over shaved roots and let sit for 15 minutes.
