Golden Plum and Ginger Jam

Type of Meal: Side-Dish

Ingredients:
4 cups Plums
1/4 cup Water
2 Tbs grated fresh Ginger
2.5 Tbs. Pectin
4 cups Sugar
1. Heat plums,water, ginger and pectin together in heavy-bottomed pan.

2. When plums have softened and you can’t stir down the boil add all the sugar at once.

3. Bring back up to a boil that you can’t stir down and boil for 1 minute.

4. Take off heat and ladle into jars or an appropriate container. 5. Let set up overnight but have some good bread and butter around to try some when its warm

Background/Suggestions:
I really like anything plum. There was a plum tree in our backyard growing up so my mom always put up some jam. When Seedling said they would have some golden plums for just a couple weeks I figured it might be cool to make some jam outside. This is just straight ahead mid-Western jam with lots of sugar and pectin added.
