Chicken with Garlic Scapes and Capers

2 lb. Chicken
2 Tbsp. Unsalted Butter
2 Tbsp. Vegetable Oil
4 Tbsp. Dry White Wine
2 Tbsp. Lemon Juice
4 Chopped Garlic Scapes
1 Tbsp. Drained Capers
1. In a large heavy skillet heat 1 Tbsp. of butter and the oil over medium high heat.

2. Saute chicken, with and lemon juice until cooked through.

3. Add scapes, capers, and season with salt & pepper about 7 min (or halfway into chicken cook time). Your cook time will depend on cuts of chicken.

4.Transfer chicken to a platter and keep warm.

5. Pour.
